Determination of the levels of trans isomers in the margarines of origin vegetable traded in Cartagena - Colombia

Due to the large problem that causes the use ofmodified vegetable fats, which are highly detrimentalto human health, we analyzed the presence of transfatty acids, in vegetable margarines Colombianbrands four, sold in supermarkets in the Cartagenacity, using gas chromatography technique. Also weidentified the risks associated with cardiovasculardiseases according to the levels of trans isomersfound, taking into account some scientific studiesthat relate the trans fat consumption with thesediseasesIn this study found trans fats in margarines analyzed,whose values ranged from 1.43% to 2.99% of thefat matter (%mg), in compliance with Colombianlaw (0% trans equals less than 500 mg per portion).However, do not meet the requirements of theWHO (World Health Organization) which statesthat these fats should be totally eliminated of thediet human.
